Prosciutto Wagon Wheels

Ingredients
  

  • 1 17-ounce box frozen puff pastry, thawed
  • 2/3 cup Dijon mustard divided
  • 3/4 pound prosciuto very thinly sliced
  • 2 cups shredded Provolone divided

Method
 

  1. Preheat oven to 425 degrees.
  2. Grease large baking sheet.
  3. Working with one sheet of the puff pastry, keeping remaining sheets wrapped and cold, roll out on lightly floured surface to 14 inch square.
  4. Brush with thin layer of mustard. Cover with half of the prosciutto slices, slightly overlapping and leaving 1/2 inch border around edges. Sprinkle with one cup of the cheese.
  5. Roll very tightly, from long side. Pinch seams to seal and tuck ends under.
  6. Repeat with remaining pastry sheet.
  7. Cut into 1/2 inch pieces and place, cut side up, 1 inch apart on prepared backing sheet.
  8. Bake 10 to 15 minutes or until golden brown.

Notes

These are great appetizers for a special occasion. You can easily substitute the prosciutto with sliced ham and the Provoline with Mozzarella or another cheese.
